Update vtnerd-2021-q1.md part2

I finished this a long, long time ago, but decided to mark it as completed this last Friday, and work through the last month as a normal work month (finally). The bulk of the time (in fact, far more than 160 hours) was spent on a new serialization system for Monero. I also "billed" to this CCS work on end-to-end encryption (incomplete), bulletproof++ (incomplete, mostly reading about it), and LWS work: added unit tests, added admin REST server, added msgpack support to new serialization system, and added webhook support for incoming payment_id/addresses.
